Chocolate Pudding 1/2 C cocoa 1/4 C sugar 1/4 t salt 2 T corn starch 1/2-1 C cream (used coconut cream/milk) 2 C milk 6 oz chocolate 1 t vanilla Dry mix first 3. Separately whisk next 2 together. Boil milk. Add dry and cream mixtures to milk. Re-boil, whisk until it thickens. Add chocolate and vanilla. Divide into ramekins or bowls. Makes about 24 oz. Vanilla Pudding 1/3 C sugar 1/4 t salt 2+ T corn starch 1/2 C cream (used coconut cream/milk) 1 1/2 C milk 2 egg yolks 1 t vanilla 2 T butter Dry mix first 3 in a 2qt sauce pan. Measure out milk + cream in a 2C measuring cup and then whisk into the pan. Heat pan over medium flame, whisking. Whisk the yolks in a separate bowl and whisk in some of the hot milk, then return bowl contents to the pan. Bring to a boil, whisking the whole time. Finally, take off the heat and stir in the vanilla and 2T of butter. Divide into 4 large ramekins or more small bowls.
