Kebabs

This is from Fine Cooking No.45 p.90 "For quick grilling, think kebabs". This is just using meat on the skewers, but vegetables such as cherry tomatoes, squares of bell pepper, squash, onion are also fine. Cook each type of vegetable on its own skewer or mix with other types. The meat cooks for longer then the vegetables like so mixing meat and vegetables on the same skewer may over cook the veggies. But do what seem right to you.

Ingredients

Quantity Item
1+ lb pork shoulder, chicken thighs, or boneless beef (e.g.,rib-eye)
1 T brown sugar
4 T soy sauce
1 large clove of garlic, minced
1½ tsp ground cumin (toasted if starting from seed)
¾ tsp ground coriander (toasted if starting from seed)
½ tsp freshly ground black pepper
pinch or more cayenne, Aleppo chile flakes, etc
1 T lemon juice
¾ tsp grated orange zest
2 T olive oil
long bamboo or metal skewers

Instruction

Cut the meat into about 1" to 1½" cubes/chunks. In a bowl large enough to hold the marinade and meat combine all the marinade ingredients. Add the meat and marinate for 30+ minutes.

Cook over coals or under a broiler if that's more convenient. Watch carefully to keep from burning.
