Original recipe off the back of a 40 oz. box of Albers Yellow Corn Meal.
| 1 C | Yellow corn meal |
| 1 C | all purpose flour |
| ½ C | granulated sugar |
| 1 T | baking powder |
| 1 tsp | salt |
| 1 C | milk |
| ⅓ C | vegetable oil |
| 1 ea | large egg, lightly beaten |
Preheat oven to 400°.
Butter an 8" square baking pan. Combine the dry ingredients (corn meal, flour, sugar, salt, baking powder) into a medium bowl. In a separate bowl, combine the liquids (milk, oil, egg) in a smaller bowl. Mix the liquids into the dry and pour into the prepared baking pan.
Bake for 25-30 min or until a toothpick into the center comes out clean (the latter is more important - don't underbake). Serve warm with butter.
