Mix Ingredients in a 2-4qt container with a lid:
    Flour: 400g
    Water: 300g
    Salt: 1 1/4 tsp
    Yeast: 1/4 tsp
Cover and let sit overnight on the counter (12-18 hours)
Scrape out onto a floured board.
2 letter folds.
Cover with a towel and let rise for 2 hours or until doubled at room temp or a little higher.
Preheat oven at 475 deg for at least 1/2 hour with the dutch oven in.
Pull out the dutch oven and place loaf in. Cover and replace in oven
Bake covered for 30 min
Uncover and bake for 20 min more until well browned.
