# Black Bean and Corn Salad ## Ingredients * 2 C dried black beans, cleaned or 2 15oz. cans of black beans drained/rinsed * 1/3 C freshly squeezed lime juice * 1/2 C olive oil * 1 clove garlic, minced * 1 tsp fine salt * 1/4 tsp cayenne pepper * 2 ears corn, kernels cut off the cob, or 1 1/2 C frozen corn * 1 avocado, peeled pitted, and cut into 1/2 in. pieces * 1 small red bell pepper, seeded and cut into 1/2 in. pieces * 6 green onions with tops finely chopped * 1 fresh hot cheli pepper, seeded and minced. * 1/2 C coarsely chopped fresh cilantro ## Method If using dried beans, place the beans in a large bowl and add enought water to cover by 2 in. Soak for 6-12 hours, then drain and rinse. Place in a pot, add water to cover, bring to a boil, and then simmmer over low heat until tender (1 1/2 to 2 hours). Drain and set aside. Mix all ingredients well and serve.
